Apple Mille-Feuille

Apple Mille-Feuille with Caramelized Chestnuts, Calvados Chantilly, Caramel and Grilled Almonds.

Baby Eggplants…

Found baby eggplants at Marczyk’s. Thought I’d try them.
Steamed them for 10 minutes & stirred them in duck fat with ginger, shallots, garlic, olive oil, balsamic vinegar, sherry and soy sauce.




Marczyk’s just received a new Bordeaux. I had to try it 🙂

Meatballs – Part 1
Got the recipe from Food & Wine November 2015.
Seared some of them adding some sherry towards the end. The rest was slowly cooked in tomato sauce for 30 minutes in the oven.
